In addition to looking damn adorable, these pressure egg bites are super delicious and easy to make! Just like the bites of Starbucks, but better because you made them!
Create a tray of egg bites and you'll have a protein-rich snack to pop in your mouth every time you go hungry! They are easy to cook using a silicone mold and your Instant Pot (or electric pressure cooker).
The egg bites are just as they seem: pies, quiche bites, eggs and cheese, and any mix-in you want. They are tasty, portable and easy to eat. What's wrong?
How to make egg bites?
This recipe uses three large eggs to make seven egg bites, using this model of silicone mold. The search for "molds for egg bites" on Amazon produces a lot of results, and all similarly shaped brands will work well.
I prefer to use one mold at a time, since the egg bites tend to come out more evenly and more pleasantly shaped this way, but you can also double the recipe and stack two molds one above the other. Just increase the cooking time from 8 to 10 minutes to ensure that the double batch cooks.
Also, be sure to put a roll of parchment over the top of both layers. The parchment prevents condensation from the lid from dripping into the bites.
What are some good stuffings for egg bites?
In addition to the eggs, add a little bit of cheese and some extra pieces to make your egg bites fun and tasty.
I like to mix a mixture of fresh cheese and soft cheese (cream cheese, brie, boursin or even some big laughing cow) into the eggs, then mix some grated cheese with the other mix-in . For egregious, less chewy bites, you can certainly skip or reduce the amount of cheese. If so, you may want to add extra eggs or egg whites to make up the volume, so your bites are not too small.
For the egg bites pictured here, I used a little (fully cooked) chopped breakfast sausage, bell pepper and green onions. The egg bites are an excellent storage place for leftovers, also for cooked meat or roasted vegetables from the evening's dinner.

How to eat and heat egg bites
Enjoy the egg bites directly from the breakfast or brunch pot, or pack them as a high protein and snackable pick-me-up. They are also fantastic the day after, they are smoked on a piece of bread and heated in the toaster. If you want to freeze them, thaw them in the refrigerator for a few hours or overnight before gently heating them in the toaster or microwave.

How to make the recipe of egg bites pressure cooker
You can double this recipe and cook in two silicone molds, stacked one on top of the other. Put a piece of parchment on top of each mold.
- 3 large eggs
- 1/4 cup of ricotta
- 1/4 cup of soft cheese, like cream cheese, brie, Boursin or Laughing Cow
- 1/2 cup minced mix-in, such as cooked meats and / or raw or cooked vegetables
- 1/2 cup of grated cheese, such as cheddar, monterey jack or mozzarella
1 Combine the eggs and the cheeses: Combine the eggs, ricotta and soft cheese in a blender. Mix at medium speed for about 30 seconds, until smooth.
2 Add missions: Pour the mixed egg mixture into a bowl. Add the chopped mix-in and the grated cheese and mix to combine.
3 Fill the molds: Use a small amount of oil or non-stick cooking spray to grease a silicone egg mold, then pour 1/4 cup of mixture into each of the fingerprints in the mold. Eliminate any drops.
4 Prepare the pressure cooker: Pour 1 cup of water into the instant pot or electric pressure cooker. Carefully transfer the egg mold to the wire steam rack, then place an 8-inch round parchment or aluminum foil over the mold to prevent condensation from dripping on the dots during cooking. Grasping the handles of the steam rack, lower the egg mold into the pan.
5 Cook the pressure eggs: Fix the lid on the pressure cooker. Make sure that the pressure regulator is set to the "Sealing" position. Select the "Pressure Cook" or "Manual" program, then adjust the time to 8 minutes at low pressure. (If you are doing a double batch, increase the cooking time to 10 minutes.)
The pressure cooker will take about 10 minutes to reach full pressure. The cooking time starts when it has reached full pressure.
6 Release the pressure: When the timer switches off, allow the pressure to release naturally for 5 minutes, then quickly release the pressure by moving the pressure relief knob from "Sealing" to "Venting". It will take a minute or two for the pressure to completely discharge.
7 Remove the egg bites from the pressure cooker: Wearing heat resistant gloves, grasp the ends of the grid to lift the mold from the die. Remove the parchment sheet and allow the bites to cool for about 2 minutes (they will deflate a little while they cool). Use a spoon to remove the bites from the mold and transfer them to a serving dish.
8 Serve the egg bites: While it is hot, serve bites (alone, or with toast or a stack of mixed vegetables), or refrigerate for up to 3 days in a tightly closed container. To heat, cook very briefly (about 25 seconds, depending on the microwave power).
